Ingredients
- 1 tablespoon vegan butter
- 2 ½ cups corn, fresh or frozen
- 8 ounces vegan cream cheese, softened
- 1 cup shredded vegan cheddar cheese, divided
- ½ cup vegan ranch dressing
- ¼ cup Bragg Smoky BBQ nutritional yeast
- 1/4 cup BBQ sauce
- 1 ½ teaspoons garlic salt
- ½ teaspoon black pepper
- ¼ cup green onion, chopped, plus more for garnish
- Tortilla chips and fresh vegetables, for serving
- Heat the oven to 350 degrees F. Combine all of the ingredients in a medium oven safe skillet, reserving ½ cup of the vegan cheddar for topping. Cook, stirring, until ingredients are well combined, about 5 minutes..
- Top with the remaining ½ cup of vegan cheddar and place in the oven. Bake for 20-25 minutes or until the dip is hot and bubbly.
- Remove from the oven, garnish with additional chopped green onions and serve with tortilla chips and fresh vegetables for dipping.
