Marinated Skewers

Ingredients

Marinade ingredients
1/3 cup olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 tbsp Dijon mustard 
1 tbsp Bragg Apple Cider Vinegar
1 tbsp soy sauce
3 garlic cloves, minced
1 tsp paprika
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste

Skewer ingredients
1.5 pounds chicken breast or seitan 
2 small zucchini
1 red or orange bell pepper
1/2 red onion

STEP 1

In a bowl, mix together all of the marinade ingredients and set aside.

STEP 2

Chop the chicken or seitan into 1-inch cubes, the pepper and onion into 1-inch squares, and the zucchini into 1/2 inch wide rounds.

STEP 3

Add the chicken/seitan and veggies to a ziploc bag and then pour the marinade on top, making sure it covers everything in the bag.

STEP 4

Marinate in the fridge anywhere from 45 minutes to 3 hours. (If using wooden skewers, soak them in cold water for at least 30 minutes.)

STEP 5

Drain any excess marinade and assemble skewers with equal parts vegetables and chicken/seitan.

STEP 6

Grill the skewers on medium-high heat for 5-7 minutes on both sides.

STEP 7

Enjoy! Optional: squeeze lemon juice on top once finished and garnish with fresh herbs.
