Marinated Skewers



Marinade ingredients

  • 1/3 cup olive oil

  • 2 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp Dijon mustard 

  • 1 tbsp Bragg Apple Cider Vinegar

  • 1 tbsp soy sauce

  • 3 garlic cloves, minced

  • 1 tsp paprika

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and pepper to taste

Skewer ingredients

  • 1.5 pounds chicken breast or seitan 

  • 2 small zucchini

  • 1 red or orange bell pepper

  • 1/2 red onion

In this recipe:

  • In a bowl, mix together all of the marinade ingredients and set aside.
  • Chop the chicken or seitan into 1-inch cubes, the pepper and onion into 1-inch squares, and the zucchini into 1/2 inch wide rounds.
  • Add the chicken/seitan and veggies to a ziploc bag and then pour the marinade on top, making sure it covers everything in the bag.
  • Marinate in the fridge anywhere from 45 minutes to 3 hours. (If using wooden skewers, soak them in cold water for at least 30 minutes.)
  • Drain any excess marinade and assemble skewers with equal parts vegetables and chicken/seitan.
  • Grill the skewers on medium-high heat for 5-7 minutes on both sides.
  • Enjoy! Optional: squeeze lemon juice on top once finished and garnish with fresh herbs.
