Science

No, we do not use Apeel or Organipeel on apples used for ACV. There is only one way to produce Bragg raw, organic, unfiltered Apple Cider Vinegar. We thrive on natural fermentation and that’s only possible with apples straight from the farm. Organic, fresh apples are the bedrock of our decades-old recipe and there is no changing that.

Many foods, including grapes, oranges, maple syrup, honey and even beer can be used to produce vinegars; all of which have their own unique flavors. Apple cider vinegar is made in a two-step fermentation process to convert apple juice into vinegar. First, the apples must be crushed and juiced. Then, bacteria and yeast convert the sugars in the juice to alcohol. This is called “fermentation”, and is the same process for making wine or beer. Lastly, a second fermentation occurs when the alcohol is converted into vinegar by “acetobacter” bacteria which creates acetic acid. The compounds in apples give apple cider vinegar a sweet and crisp flavor, and the acetic acid provides sour notes. 

All Bragg Apple Cider Vinegar Products use unfiltered Apple Cider Vinegar and were made with “The Mother”.  Our Apple Cider Vinegar and our flavored vinegar blends are both Live, Raw products.  However, when vinegar is combined with other ingredients, such as tea or juice in our Refreshers drinks, or oil and herbs in dressings, it must be pasteurized to prevent spoilage.  To understand the features of our products health benefits, please see our Product Features chart.

Purchasing apple cider vinegar supplements can be confusing, as labels do not always communicate the product’s acetic acid content. Studies indicate that a daily dose of 750 -1500 mg of acetic acid are associated with key health benefits such as maintaining healthy weight, healthy blood sugar levels and healthy cholesterol levels.  Be aware of your purchase, as a vast majority of supplements deliver nowhere near the recommended amount of acetic acid.

Bragg Liquid Aminos is a vegetable Protein Seasoning made from non-GMO verified soybeans. It is the original formula, created by health pioneer, Paul C. Bragg.

NOOCH is made by fermenting Saccharomyces cerevisiae yeast, then drying it out for harvesting. Bragg’s nutritional yeast is grown in vats of molasses, corn, nutrients, and water. Once the yeast is mature, it gets poured onto a conveyor belt and goes through a drying process that breaks it down into little flakes. It’s that simple!

Beta-glucan is a soluble dietary fiber found in the cell walls of yeast (like in Bragg nutritional yeast!) and other plant-based foods such as oats and barley. The source of the compound is important—yeast-derived beta-glucan has different properties and health benefits than beta-glucan from oats, for example. Scientific research suggests that beta-glucan is associated with improved immune response, healthy blood sugar levels, and cholesterol levels when derived from Saccharomyces cerevisiae yeast.

Saccharomyces cerevisiae is a microorganism used in the fermentation of different foods.

Vitamin B12 is an essential vitamin, meaning humans must consume it in the diet because we cannot make it in our bodies. The main sources of vitamin B12 are meat, poultry, fish, eggs, milk, cheese, and fortified cereals. The recommended intake for vitamin B12 is 2.4micrograms per day for adults. Since the main sources of vitamin B12 are animal products, vegans are typically lacking in vitamin B12 because they do not eat animal products including fish, eggs, milk, and cheese. Prolonged deficiency in vitamin B12 can lead to weakness, fatigue, anemia, memory loss, and even numbness or tingling in the hands and feet. If left untreated, the deficiency can cause severe neurologic problems and blood diseases. The American Journal of Clinical Nutrition suggests that, to avoid vitamin B12 deficiency, vegans should regularly consume foods fortified with vitamin B12, such as nutritional yeast.

The olive tree originated in ancient Greece, and Bragg is proud to import extra virgin olive oil made 100% from Greek Koroneiki olives! Renowned as “the Queens of olives” - Koroneiki olives are green and make a fragrant, strong, and peppery oil. Koroneiki olive oil is low in acidity and full of antioxidant polyphenols. Koroneiki olives (and oils made from organic olives) contain more polyphenols on average than other olives and olive oils.

Polyphenols are antioxidant plant compounds that offer a variety of health benefits. Several of the polyphenols found in olive oil are unique since they come from compounds present in all parts of the olive tree. Antioxidants, like the polyphenols in Bragg olive oil, help fight oxidative stress and may help fight inflammation.

Many conventional oils use heat, steam and solvents. Bragg Extra Virgin Olive Oil is only expeller pressed.

For example, olives used in less premium oils are often pressed multiple times, which leads to a reduction in flavor, aroma, and health-supporting nutrients. “First cold pressed” olive oil—such as Bragg olive oil— is from olives that are crushed and pressed only once and are never heated during the process, resulting in maximum quality and purity.

The smoke point on Bragg oil is 374-405°F. It is naturally high in monounsaturated Oleic Acid (a healthy fat), making our olive oil ideal for sautéing, baking, stir frying, drizzling, and use in salad dressings.

Apple cider vinegar is versatile in the kitchen. From salads to pickles to drinks, ACV can be easily incorporated into your day.


Salad dressings - Simply sprinkle apple cider vinegar and your favorite oil onto a salad, or combine 2 parts oil with 1 part apple cider vinegar in a jar, add desired herbs, seasonings, or sweeteners and shake to combine. One of our favorite combinations is apple cider vinegar, extra virgin olive oil, Dijon mustard, and a dash of honey.


Marinades - While traditionally used to flavor and tenderize meat, marinades can also be used in vegan cooking to flavor tofu and tempeh. Marinades usually consist of vinegar, salt, and sugar. Apple cider vinegar provides acetic acid to break down the food’s surface which allows the flavors of the marinade to penetrate.


Pickling - All you need is vinegar, salt, and sugar! For a “quick pickle” brine, combine equal parts apple cider vinegar and water, then add 1 tablespoon each salt and sugar per cup. Customize with herbs and spices (like thyme, dill, and rosemary), crushed garlic cloves, or whole spices like peppercorns and mustard seeds.


Splash on foods - Add a splash of ACV to cooked foods like braised kale or collard greens, to draw out their flavor.


Make shrubs or tonics - A shrub is a concentrated syrup that combines fruit, sugar, and vinegar. The result is a sweet, acidic mixer that can be enjoyed on its own or used in a variety of mixed drinks. Also called “drinking vinegars”, shrubs are a great way to consume apple cider vinegar for its health benefits!


Add to water - 1 to 2 tablespoons of apple cider vinegar anytime to help stimulate the digestive tract.

No. Bragg Liquid Aminos are not fermented and do not include added salt and/or artificial preservatives. They are also gluten-free. 

Soy sauces are made using a fermentation process and include wheat gluten. Many manufacturers also add salt and/or artificial preservatives.

NOOCH is a 100% plant-based, low calorie seasoning derived from Saccharomyces cerevisiae yeast. It’s packed with nutrients like protein and fortified with vitamin B12. Many vegans enjoy NOOCH because of its vitamin B12 and protein content and savory, cheese-like flavor.

NOOCH should be stored in a cool, dark place, such as a pantry or even the refrigerator, and will last up to two years.
