What exactly is it?
Extra Virgin Olive Oil is the juice from the fruit of the olive tree, which is obtained solely by mechanical or other physical means under conditions where no heat, chemical, or other processes may lead to alterations in the oil. Extra virgin olive oil must have a free acidity of no more than 0.80%, and flavor, color and aroma characteristics which correspond to those fixed within the International Olive Oil Council standard. Unlike vegetable oils, olive oil is extracted from a fruit, the olive, and not a seed.
