Pink Pitaya Pancakes

Valentines Day is just two days away so we want to share one of our favorite sweet treat recipes!

Pink Pitaya Pancakes:

Ingredients:
1 cup whole wheat flour
1 tbsp ground flax
1/2 tbsp pitaya powder
2 tbsp coconut sugar
2 tsp baking powder
1/2 tsp salt
1 cup almond milk
1 tbsp Bragg Apple Cider Vinegar
1 1/2 tbsp coconut oil
1 tsp vanilla

Directions:
Make your flax egg (1 tbsp flax + 3 tbsp water). Make your “buttermilk” (almond milk + apple cider vinegar). Set both aside for 5 minutes. Mix your dry ingredients in a separate bowl. Combine them to the flax egg and buttermilk. Then combine the rest of the ingredients. It helps if you blend them all with a hand mixer. Cook your pancakes over medium heat for about 2-3 minutes, then flip to other side and repeat. Top with raspberries, kiwi, coconut chips and enjoy!
