TOFU FRENCH TOAST
1 lb soft tofu
2 cups soy or rice milk
1 tsp vanilla extract
1 tsp cinnamon powder
2 cups distilled water
Bragg Organic Olive Oil
10 slices of whole-grain bread
Mix tofu, soy or rice milk, vanilla extract, cinnamon powder and water in a blender until you get the consistency of beaten eggs. Dip slices of bread into mixture. Cook in a heated, oiled iron skillet until golden brown. Top with fresh fruit and maple syrup. Makes 10 slices.
