BROCCOLI SOUP

BROCCOLI SOUP

1 Tbsp Bragg Organic Olive Oil
1 Tbsp whole-grain flour
1½ cups veg­etable stock (see recipe below)
1 cup soy milk
1 tsp Bragg Liq­uid Aminos
2 cups broc­coli flo­rets
1 Tbsp Sesame Tahini
½ cup soft tofu
½ tsp sweet basil
a dash of grated nutmeg

Heat olive oil. Stir in flour and sweet basil. Add stock and bring to a boil. Add broc­coli flo­rets (save stems for another veg­etable dish) and sim­mer 5–8 min­utes. Mix tahini and tofu in blender. Add cooked broc­coli mix­ture, soy milk, Liq­uid Aminos and nut­meg. (Optional: Bragg Sprin­kle, 24 herbs & spices, will add more herbal fla­vors.) Process at low speed, then medium until smooth. Serve hot.

Serves 4.

VEGETABLE STOCK
2 car­rots, slice
2 red onions, slice
4 leeks, chop
2 cel­ery ribs, chop
2 Tbsps Bragg Organic Olive Oil
10 cups dis­tilled water
2 tsps Bragg Sprin­kle
Bragg Liq­uid Aminos to taste

Sauté veg­eta­bles in olive oil until soft, but not brown, about 4 min­utes. Add dis­tilled water and bring to boil. Add Sprin­kle sea­son­ing and sim­mer cov­ered for 2 hours. Remove from heat and let stand 10 min­utes. Now add Liq­uid Aminos to taste. Blend and strain. Dis­card solids. Store, cov­ered, in refrig­er­a­tor. Use within 24 hours. This stock does not freeze well.

SUNFLOWER SEED SOUP

¾ cup car­rots, grate
1 large red onion, finely chop
2 Tbsps Bragg Organic Olive Oil
3 medium sized toma­toes
1 tsp raw honey
1½ cups dis­tilled water
1 Tbsp Bragg Liq­uid Aminos
½ cup sun­flower seed meal*
shake of Bragg Sprin­kle (24 herbs & spices)

Skin toma­toes, if desired and blend in food proces­sor until smooth. Slowly heat olive oil in saucepan, sauté car­rots and onions over low heat, 3 min­utes. Add water, cover and cook until veg­eta­bles are ten­der. To tomato mix­ture add cooked veg­eta­bles includ­ing water and blend in food proces­sor until smooth. Pour mix­ture back into saucepan, add Liq­uid Aminos, Sprin­kle, honey and sun­flower seed meal. Reheat to below sim­mer point, stir­ring con­stantly. For more nutri­tion, gar­nish with soy yogurt, chopped green onions with stems, or avo­cado slices.

Serves 4.

*Sun­flower seed and nut meals can be pur­chased at health stores, or bet­ter to make your own in blender or grain or elec­tric cof­fee grinder.

CARROT — PEA SOUP

1 cup car­rot juice
1 cup cel­ery, chop
water­cress (for gar­nish)
1 cup fresh peas
½ cup raw almond butter

Blend all ingre­di­ents except water­cress to desired con­sis­tency. Gar­nish with watercress.

CORN CHOWDER

CORN CHOWDER

1 small red onion, slice
1 Tbsp raw honey
3 cups pota­toes, dice
1 Tbsp Bragg Organic Olive Oil
1½ cups corn ker­nels
1 cup fresh or can toma­toes
1 cup soy milk 1 tsp Bragg Liq­uid Aminos
shake of Bragg Sprin­kle (24 herbs & spices)

Add the onion to the olive oil and slowly sauté for five min­utes with­out brown­ing. Add veg­eta­bles to 1 qt. boil­ing dis­tilled water; cook until ten­der. Slowly add soy milk, Liq­uid Aminos, Sprin­kle and honey. Serve hot.

ROYAL SOUP

ROYAL SOUP

3¾ cups pota­toes, dice
1½ qts boil­ing dis­tilled water
1½ cups fresh or frozen peas
½ tsp Bragg Liq­uid Aminos
1½ cups aspara­gus stalks, chop
4½ Tbsps chives, chop
3 Tbsps Bragg Organic Olive Oil
¼ tsp thyme
shake of Bragg Sprin­kle (24 herbs & spices) and Bragg Sea Kelp

Cook pota­toes in boil­ing water for 15 min­utes until ten­der. Drain, reserv­ing liq­uid; press pota­toes through a strainer and add to saved potato liq­uid. Add peas and chopped aspara­gus. Sim­mer 10–15 min­utes or until ten­der. Add chives, olive oil, Liq­uid Aminos, Bragg Sprin­kle and Sea Kelp.

Serves about 6.

PURÉE of SPINACH SOUP

3/4  cup steamed spinach
2 cups dis­tilled water
3 Tbsps potato flour
2 Tbsps Bragg Olive Oil
3 Tbsps soft tofu (optional)
½ cup soy milk
½ tsp Bragg Liq­uid Aminos
shake of Bragg Sprinkle

Sauté spinach in olive oil 4 min­utes. In a blender add flour and tofu to soy milk and water; add sea­son­ings if desired. Mix all ingre­di­ents until smooth. Heat again. Gar­nish with soy yogurt or soy sour cream if desired.

Serves 4.

Vari­a­tion: any veg­etable of your choice, car­rots, squash, etc. make a deli­cious creamed soup.

GOLDEN SOUP

GOLDEN SOUP

1 sweet onion, chop
1 tsp Bragg Liq­uid Aminos
2 large ripe toma­toes, chop
½ tsp Bragg Sprin­kle
1½ qts veg­etable stock (see recipe below)
½ cup soy Parme­san cheese
3 Tbsps Bragg Organic Olive Oil
2 cloves gar­lic, slice

Cook the onion and gar­lic in olive oil until golden. Add the toma­toes to veg­etable stock and cook for 15 min­utes. Add Sprin­kle and Liq­uid Aminos. Sim­mer very slowly for 10 min­utes. Pass soup through a sieve, return to soup pot and reheat. Put heap­ing table­spoon grated Parme­san cheese in soup bowls, ladle soup over it and serve.

Serves 4–6.

CINCINNATI’s FAMOUS SPLIT PEA SOUP

CINCINNATI’S FAMOUS SPLIT PEA SOUP

2 cups dried peas, (soak overnight)
2 qts dis­tilled water
1 cup red onions, chop
2 cups cel­ery, chop
1 cup pars­ley, chop
3 Tbsps Bragg Olive Oil
2 leeks, slice thin (optional)
shake of Bragg Sprin­kle
1 tsp Bragg Liq­uid Aminos

Soak dried peas overnight, skim foam from top. Then add veg­eta­bles and sea­son­ings and cook for 30 min­utes. May be made with lentils instead of dried peas.

Serves 8.

ZUCCHINI SOUP

ZUCCHINI SOUP

1 pound zuc­chini (5 medium), wash and slice
1 cup dis­tilled water
1 bay leaf
⅛ tsp basil
½ cup pars­ley, chop
½ Tbsp Bragg Liq­uid Aminos
½ tsp Bragg Sprin­kle
2 cloves gar­lic, mash
½ cup soy yogurt
½ cup soy milk
½ cup soy Parme­san cheese

Place the zuc­chini, herbs, Sprin­kle, gar­lic, and water in a cov­ered saucepan and sim­mer gen­tly until ten­der. Add Liq­uid
Aminos. Stir in soy milk and heat, do not boil. Serve topped with soy yogurt or grated soy parme­san cheese.

GARLIC TOFU SOUP

GARLIC TOFU SOUP

20 cloves gar­lic, peel
4 to 6 cups boil­ing dis­tilled water
1 tsp Bragg Olive Oil
¼ cup pars­ley, chop
½ cup pea pods|
16 oz pack­age tofu, cube
Spray of Bragg Liq­uid Aminos and shake Bragg Sprin­kle, to taste
Sauté whole gar­lic cloves in a skil­let with olive oil. Add tofu
cubes, water, pars­ley, and pea pods. Sim­mer for 10 min­utes.
Spray with Liq­uid Aminos and add Sprin­kle to taste.
