BROCCOLI SOUP
1 Tbsp Bragg Organic Olive Oil
1 Tbsp whole-grain flour
1½ cups vegetable stock (see recipe below)
1 cup soy milk
1 tsp Bragg Liquid Aminos
2 cups broccoli florets
1 Tbsp Sesame Tahini
½ cup soft tofu
½ tsp sweet basil
a dash of grated nutmeg
Heat olive oil. Stir in flour and sweet basil. Add stock and bring to a boil. Add broccoli florets (save stems for another vegetable dish) and simmer 5–8 minutes. Mix tahini and tofu in blender. Add cooked broccoli mixture, soy milk, Liquid Aminos and nutmeg. (Optional: Bragg Sprinkle, 24 herbs & spices, will add more herbal flavors.) Process at low speed, then medium until smooth. Serve hot.
Serves 4.
VEGETABLE STOCK
2 carrots, slice
2 red onions, slice
4 leeks, chop
2 celery ribs, chop
2 Tbsps Bragg Organic Olive Oil
10 cups distilled water
2 tsps Bragg Sprinkle
Bragg Liquid Aminos to taste
Sauté vegetables in olive oil until soft, but not brown, about 4 minutes. Add distilled water and bring to boil. Add Sprinkle seasoning and simmer covered for 2 hours. Remove from heat and let stand 10 minutes. Now add Liquid Aminos to taste. Blend and strain. Discard solids. Store, covered, in refrigerator. Use within 24 hours. This stock does not freeze well.

¾ cup carrots, grate
1 large red onion, finely chop
2 Tbsps Bragg Organic Olive Oil
3 medium sized tomatoes
1 tsp raw honey
1½ cups distilled water
1 Tbsp Bragg Liquid Aminos
½ cup sunflower seed meal*
shake of Bragg Sprinkle (24 herbs & spices)
Skin tomatoes, if desired and blend in food processor until smooth. Slowly heat olive oil in saucepan, sauté carrots and onions over low heat, 3 minutes. Add water, cover and cook until vegetables are tender. To tomato mixture add cooked vegetables including water and blend in food processor until smooth. Pour mixture back into saucepan, add Liquid Aminos, Sprinkle, honey and sunflower seed meal. Reheat to below simmer point, stirring constantly. For more nutrition, garnish with soy yogurt, chopped green onions with stems, or avocado slices.
Serves 4.
*Sunflower seed and nut meals can be purchased at health stores, or better to make your own in blender or grain or electric coffee grinder.

1 cup carrot juice
1 cup celery, chop
watercress (for garnish)
1 cup fresh peas
½ cup raw almond butter
Blend all ingredients except watercress to desired consistency. Garnish with watercress.

CORN CHOWDER
1 small red onion, slice
1 Tbsp raw honey
3 cups potatoes, dice
1 Tbsp Bragg Organic Olive Oil
1½ cups corn kernels
1 cup fresh or can tomatoes
1 cup soy milk 1 tsp Bragg Liquid Aminos
shake of Bragg Sprinkle (24 herbs & spices)
Add the onion to the olive oil and slowly sauté for five minutes without browning. Add vegetables to 1 qt. boiling distilled water; cook until tender. Slowly add soy milk, Liquid Aminos, Sprinkle and honey. Serve hot.

ROYAL SOUP
3¾ cups potatoes, dice
1½ qts boiling distilled water
1½ cups fresh or frozen peas
½ tsp Bragg Liquid Aminos
1½ cups asparagus stalks, chop
4½ Tbsps chives, chop
3 Tbsps Bragg Organic Olive Oil
¼ tsp thyme
shake of Bragg Sprinkle (24 herbs & spices) and Bragg Sea Kelp
Cook potatoes in boiling water for 15 minutes until tender. Drain, reserving liquid; press potatoes through a strainer and add to saved potato liquid. Add peas and chopped asparagus. Simmer 10–15 minutes or until tender. Add chives, olive oil, Liquid Aminos, Bragg Sprinkle and Sea Kelp.
Serves about 6.

3/4 cup steamed spinach
2 cups distilled water
3 Tbsps potato flour
2 Tbsps Bragg Olive Oil
3 Tbsps soft tofu (optional)
½ cup soy milk
½ tsp Bragg Liquid Aminos
shake of Bragg Sprinkle
Sauté spinach in olive oil 4 minutes. In a blender add flour and tofu to soy milk and water; add seasonings if desired. Mix all ingredients until smooth. Heat again. Garnish with soy yogurt or soy sour cream if desired.
Serves 4.
Variation: any vegetable of your choice, carrots, squash, etc. make a delicious creamed soup.

GOLDEN SOUP
1 sweet onion, chop
1 tsp Bragg Liquid Aminos
2 large ripe tomatoes, chop
½ tsp Bragg Sprinkle
1½ qts vegetable stock (see recipe below)
½ cup soy Parmesan cheese
3 Tbsps Bragg Organic Olive Oil
2 cloves garlic, slice
Cook the onion and garlic in olive oil until golden. Add the tomatoes to vegetable stock and cook for 15 minutes. Add Sprinkle and Liquid Aminos. Simmer very slowly for 10 minutes. Pass soup through a sieve, return to soup pot and reheat. Put heaping tablespoon grated Parmesan cheese in soup bowls, ladle soup over it and serve.
Serves 4–6.

CINCINNATI’S FAMOUS SPLIT PEA SOUP
2 cups dried peas, (soak overnight)
2 qts distilled water
1 cup red onions, chop
2 cups celery, chop
1 cup parsley, chop
3 Tbsps Bragg Olive Oil
2 leeks, slice thin (optional)
shake of Bragg Sprinkle
1 tsp Bragg Liquid Aminos
Soak dried peas overnight, skim foam from top. Then add vegetables and seasonings and cook for 30 minutes. May be made with lentils instead of dried peas.

ZUCCHINI SOUP
1 pound zucchini (5 medium), wash and slice
1 cup distilled water
1 bay leaf
⅛ tsp basil
½ cup parsley, chop
½ Tbsp Bragg Liquid Aminos
½ tsp Bragg Sprinkle
2 cloves garlic, mash
½ cup soy yogurt
½ cup soy milk
½ cup soy Parmesan cheese
Place the zucchini, herbs, Sprinkle, garlic, and water in a covered saucepan and simmer gently until tender. Add Liquid
Aminos. Stir in soy milk and heat, do not boil. Serve topped with soy yogurt or grated soy parmesan cheese.

GARLIC TOFU SOUP
20 cloves garlic, peel
4 to 6 cups boiling distilled water
1 tsp Bragg Olive Oil
¼ cup parsley, chop
½ cup pea pods|
16 oz package tofu, cube
Spray of Bragg Liquid Aminos and shake Bragg Sprinkle, to taste
Sauté whole garlic cloves in a skillet with olive oil. Add tofu
cubes, water, parsley, and pea pods. Simmer for 10 minutes.
Spray with Liquid Aminos and add Sprinkle to taste.
Serves 4–6
