AVOCADO SOUP
4 ripened avocados
1 small red onion
2 stalks celery, grate
shake of Bragg Sprinkle
4 cups distilled water
1 clove garlic
2 ripe tomatoes
shake of Bragg Kelp
Liquify smooth. Garnish with alfalfa sprouts.

1 cup whole-grain couscous
1 cup boiling distilled water
1 small red onion, mince
1 red bell pepper, dice
1 carrot, grate
½ cup red cabbage, finely shred
½ cup green peas, fresh or frozen
½ cup raisins or currants
⅓ tsp mustard powder
⅓ tsp curry powder
1 tsp sesame oil
1 tsp Bragg Liquid Aminos
shake of Bragg Sprinkle
2 Tbsps Bragg Apple Cider Vinegar
Place couscous in bowl and pour the boiling water over it. Stir until mixed, then cover and let stand until cooled. Fluff
lightly with fork. Add onion, bell pepper, carrot, cabbage, peas and raisins or currants to the couscous. Combine vinegar, sesame oil, Liquid Aminos, Sprinkle, mustard and curry powder.
Mix well. Pour over salad and mix.
Serves 4.

QUICK BLACK BEAN CHILI
1 Tbsp Bragg Liquid Aminos
4 oz can chilies, dice
15 oz can diced tomatoes
2 red onions, chop
½ tsp Bragg Sprinkle
4 cloves garlic, crush
1 Tbsp Bragg Olive Oil
2 –15 oz cans black beans, drain and rinse
⅓ tsp dried cumin
½ cup distilled water
¼ cup cilantro, chop
Heat water in large pan, add onions and garlic. Cook over medium heat until onions are soft. Add seasonings, Liquid Aminos and chilies. Cook 5 minutes over medium heat. Add tomatoes, black beans, and olive oil. Cover, simmer 10 minutes.
Top with cilantro and nutritional yeast flakes.
Serves 4–6.

CAJUN TOFU
2 tsps Bragg Olive Oil
½ cup tomato sauce
½ cup red onion, dice
½ tsp Bragg Sprinkle
½ cup celery, dice
1 tsp arrowroot powder
½ cup green pepper, dice
½ lb firm tofu, small cube
½ cup zucchini, dice
1 Tbsp Bragg Liquid Aminos
2 cloves garlic, mince
½ cup Bragg Apple Cider Vinegar
Sauté onion, celery, green pepper, zucchini and garlic in olive oil over medium-high heat for about 5 minutes. Add tomato sauce, vinegar, Sprinkle or spices desired. Dissolve arrowroot and Bragg Liquid Aminos and add to vegetable mixture. Add tofu; cook 5 minutes, stir occasionally.
Serves 4.

3/4 cup steamed spinach
2 cups distilled water
3 Tbsps potato flour
2 Tbsps Bragg Olive Oil
3 Tbsps soft tofu (optional)
½ cup soy milk
½ tsp Bragg Liquid Aminos
shake of Bragg Sprinkle
Sauté spinach in olive oil 4 minutes. In a blender add flour and tofu to soy milk and water; add seasonings if desired. Mix all ingredients until smooth. Heat again. Garnish with soy yogurt or soy sour cream if desired.
Serves 4.
Variation: any vegetable of your choice, carrots, squash, etc. make a delicious creamed soup.

Egg Replacer equal to 2 eggs
⅓ cup Bragg Organic Olive Oil
1½ tsps lemon juice
⅛ tsp paprika
1½ Tbsps soy cream
Add paprika to Egg Replacer; gradually add olive oil, soy cream and lemon juice.
Makes 3/4 cup sauce.

1 large, firm eggplant
2 tsps grated soy cheese
½ tsp Bragg Liquid Aminos
1 Tbsp Bragg Organic Olive Oil
1 cup whole-grain bread crumbs
2 tomatoes, chop
1 green pepper, mince
1 cup celery, finely cut
2 Tbsps red onion, mince
shake of Bragg Sprinkle
Cut eggplant in half, remove pulp, leaving thick layer in hulls. Cut pulp into bits, mix with all ingredients. Fill eggplant hulls, place in baking casserole with one cup distilled water in bottom. Cover and bake 30 minutes or until done at 325°F.
