AVOCADO SOUP

AVOCADO SOUP

4 ripened avo­ca­dos
1 small red onion
2 stalks cel­ery, grate
shake of Bragg Sprin­kle
4 cups dis­tilled water
1 clove gar­lic
2 ripe toma­toes
shake of Bragg Kelp

Liquify smooth.  Gar­nish with alfalfa sprouts.

COUSCOUS VEGGIE SALAD

1 cup whole-grain cous­cous
1 cup boil­ing dis­tilled water
1 small red onion, mince
1 red bell pep­per, dice
1 car­rot, grate
½ cup red cab­bage, finely shred
½ cup green peas, fresh or frozen
½ cup raisins or cur­rants
⅓ tsp mus­tard pow­der
⅓ tsp curry pow­der
1 tsp sesame oil
1 tsp Bragg Liq­uid Aminos
shake of Bragg Sprin­kle
2 Tbsps Bragg Apple Cider Vinegar

Place cous­cous in bowl and pour the boil­ing water over it. Stir until mixed, then cover and let stand until cooled. Fluff
lightly with fork. Add onion, bell pep­per, car­rot, cab­bage, peas and raisins or cur­rants to the cous­cous. Com­bine vine­gar, sesame oil, Liq­uid Aminos, Sprin­kle, mus­tard and curry powder.

Mix well. Pour over salad and mix.

Serves 4.

QUICK BLACK BEAN CHILI

QUICK BLACK BEAN CHILI

1 Tbsp Bragg Liq­uid Aminos
4 oz can chilies, dice
15 oz can diced toma­toes
2 red onions, chop
½ tsp Bragg Sprin­kle
4 cloves gar­lic, crush
1 Tbsp Bragg Olive Oil
2 –15 oz cans black beans, drain and rinse
⅓ tsp dried cumin
½ cup dis­tilled water
¼ cup cilantro, chop

Heat water in large pan, add onions and gar­lic. Cook over medium heat until onions are soft. Add sea­son­ings, Liq­uid Aminos and chilies. Cook 5 min­utes over medium heat. Add toma­toes, black beans, and olive oil. Cover, sim­mer 10 minutes.

Top with cilantro and nutri­tional yeast flakes.

Serves 4–6.

CAJUN TOFU

CAJUN TOFU

2 tsps Bragg Olive Oil
½ cup tomato sauce
½ cup red onion, dice
½ tsp Bragg Sprin­kle
½ cup cel­ery, dice
1 tsp arrow­root pow­der
½ cup green pep­per, dice
½ lb firm tofu, small cube
½ cup zuc­chini, dice
1 Tbsp Bragg Liq­uid Aminos
2 cloves gar­lic, mince
½ cup Bragg Apple Cider Vinegar

Sauté onion, cel­ery, green pep­per, zuc­chini and gar­lic in olive oil over medium-high heat for about 5 min­utes. Add tomato sauce, vine­gar, Sprin­kle or spices desired. Dis­solve arrow­root and Bragg Liq­uid Aminos and add to veg­etable mix­ture. Add tofu; cook 5 min­utes, stir occasionally.

Serves 4.

PURÉE of SPINACH SOUP

3/4  cup steamed spinach
2 cups dis­tilled water
3 Tbsps potato flour
2 Tbsps Bragg Olive Oil
3 Tbsps soft tofu (optional)
½ cup soy milk
½ tsp Bragg Liq­uid Aminos
shake of Bragg Sprinkle

Sauté spinach in olive oil 4 min­utes. In a blender add flour and tofu to soy milk and water; add sea­son­ings if desired. Mix all ingre­di­ents until smooth. Heat again. Gar­nish with soy yogurt or soy sour cream if desired.

Serves 4.

Vari­a­tion: any veg­etable of your choice, car­rots, squash, etc. make a deli­cious creamed soup.

EGG REPLACER BUTTER SAUCE

Egg Replacer equal to 2 eggs
⅓ cup Bragg Organic Olive Oil
1½ tsps lemon juice
⅛ tsp paprika
1½ Tbsps soy cream

Add paprika to Egg Replacer; grad­u­ally add olive oil, soy cream and lemon juice.

Makes 3/4 cup sauce.

STUFFED BAKED EGGPLANT

1 large, firm egg­plant
2 tsps grated soy cheese
½ tsp Bragg Liq­uid Aminos
1 Tbsp Bragg Organic Olive Oil
1 cup whole-grain bread crumbs
2 toma­toes, chop
1 green pep­per, mince
1 cup cel­ery, finely cut
2 Tbsps red onion, mince
shake of Bragg Sprinkle

Cut egg­plant in half, remove pulp, leav­ing thick layer in hulls. Cut pulp into bits, mix with all ingre­di­ents. Fill egg­plant hulls, place in bak­ing casse­role with one cup dis­tilled water in bot­tom. Cover and bake 30 min­utes or until done at 325°F.

Serves 4.
