1½ Tbsps Bragg Olive Oil
¾ cup soy cheese, grate
⅓ tsp Bragg Liquid Aminos
1½ Tbsps whole-grain flour
¾ cup soy milk
shake of Bragg Sprinkle
Heat olive oil in double boiler. Stir in flour. Add soy milk while stirring. Cook until smooth and thickened. Stir in soy cheese, Sprinkle and Liquid Aminos.
Makes 1 1/2 cups

RAVIOLI WITH WALNUTS
36 vegetarian ravioli or 1 lb whole-grain pasta
½ cup soy milk
1 cup shelled walnuts
½ cup soy cheese, grate
2 Tbsp Bragg Organic Olive Oil
Bragg Liquid Aminos to taste
Bragg Sprinkle to taste
Chop nuts, add soy cheese, soy or rice milk, and olive oil to make a sauce. Add Sprinkle and Liquid Aminos to taste. Cook ravioli or pasta. Drain and coat with the sauce.
Serves 4–6.

PURÉE OF MINTED APPLES
2 cups apples, core and quarter (peel, optional)
4 Tbsps mint leaves, mince
½ cup raisins (optional)
1 Tbsp raw honey
3 Tbsps distilled water
Cook apples until tender. Add mint and raisins if desired during last 5 minutes of cooking. Purée in blender with liquid, adding honey if desired. Top with soy or nut cream.

2 cups mushrooms, finely chop
⅓ cup red onions, chop
⅓ cup green peppers, chop
½ cup tomatoes, diced
Egg Replacer equal to 2 eggs
2 cups whole-grain bread crumbs
½ cup soy cheese, grate
1 Tbsp Bragg Liquid Aminos
⅓ cup sunflower seeds, chop
⅓ cup walnuts, chop
2 cloves garlic, mash
½ tsp Bragg Sprinkle
Mix all ingredients together. Bake in oiled loaf pan 30 minutes in 375°F oven.
BERCY SAUCE
1½ cups vegetable stock
4½ Tbsps garlic infused oil
3 Tbsps whole-grain pastry flour
1½ Tbsps shallots, mince
1 Tbsp Bragg Organic Olive Oil
1 Tbsp lemon juice
¼ cup parsley, chop
¼ tsp Bragg Liquid Aminos
Gently sauté shallots in olive oil until thoroughly heated. Blend in flour until smooth. Add stock gradually and add the garlic infused oil, lemon juice, Liquid Aminos and parsley. Simmer over low heat for 5 minutes, stirring frequently.
Serves 6–8.
Mushrooms are a rich source of riboflavin, niacin and selenium.
