4 artichokes
3 Tbsps fresh squeezed lemon juice
¼ cup Bragg Organic Olive Oil
4 cloves garlic, slice
1 tsp Bragg Liquid Aminos
⅓ tsp Bragg Sprinkle
Wash artichokes thoroughly. Cut one inch off the tops. Remove stems. Place sliced garlic between the leaves of the artichokes. Mix Sprinkle, olive oil, Liquid Aminos and lemon juice and sprinkle over artichokes. Stand artichokes on end in a saucepan using steamer basket. Steam for 30 minutes or until tender.
Serve hot or cold, whole or halved, with tofunaise (see recipe below).
Serves 4–8.
TOFUNAISE
¼ cup distilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprinkle
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon
1 tsp turmeric (optional for color)
Blend all ingredients in blender until smooth. Yields 2 cups.

2 lbs peas, shelled
2 Tbsps Bragg Organic Olive Oil
1 red onion, finely chop
shake of Bragg Sprinkle
Cook peas until tender, about 5 minutes, in a small amount of water. Sauté chopped onion in olive oil. Add cooked peas
and Sprinkle. Heat slowly in a covered pan.

1 bunch leeks, thinly slice
shake of Bragg Sprinkle
½ tsp Bragg Liquid Aminos
½ cup soy Parmesan cheese, grate
Wash and slice leeks. Steam for 15 minutes until tender. Drain. Arrange in oiled baking dish and add Sprinkle, Liquid Aminos and grated soy Parmesan cheese. Heat under broiler until cheese is golden brown. Serves 4.

KUNG PAO TOFU
1 lb firm tofu, drain and cube
1 red pepper, slice
Egg Replacer equal to 1 egg
2 green onions, slice diagonally
½ tsp Bragg Liquid Aminos
2 Tbsps Sweet and Sour
2 tsps corn flour Plum Sauce (see recipe below)
2 tsps distilled water
1 Tbsp rice vinegar
½ tsp red pepper flakes
1 tsp ginger, mince
2 Tbsps Bragg Olive Oil
1 cup cashews, chop
Mix together Egg Replacer, Liquid Aminos, corn flour and water. Add tofu and mix. Stir fry in 2 Tbsps olive oil until browned. Remove and add pepper flakes, red pepper, onion and ginger. Cook 2 minutes; add cashews and vinegar.
Serve with Plum Sauce.
Serves 4–6.
SWEET AND SOUR PLUM SAUCE
2 oz Asian pickled plums
1¼ cups raw honey
2–3 large hot red chili peppers, seeded and mince
1 red sweet pepper, seeded and mince
2 cups Bragg Apple Cider Vinegar
1¼ cups distilled water
Rub the plums through fingers to break up the flesh, but do not discard the pits. Put the honey and 14 cups of water in a saucepan and bring to a boil over medium heat. When the syrup is boiling hard, add the chili peppers, the sweet pepper and the plums with their pits. Bring back to a boil and boil 2–3 minutes, then stir in the apple cider vinegar. Let cool, then remove and discard the pits.

SWEET AND SOUR TOFU
1 lb firm tofu, drained and cubed
2 onions, slice
2 Tbsps Bragg Organic Olive Oil
1 Tbsp arrowroot
1 carrot, diagonally slice
1 red pepper, slice
1 Tbsp Bragg Liquid Aminos
¼ cup distilled water
2 zucchini, slice thin
1 cup pineapple juice
1½ cups pineapple chunks
1 tsp ginger, mince
¼ cup Bragg Apple Cider Vinegar
1 Tbsp raw honey
Brown tofu in olive oil. Add pineapple and vegetables and cook for 10 minutes. Make a paste with arrowroot, Liquid Aminos and distilled water. Add paste to vegetables, then add remaining ingredients and simmer until thickened. Serve with brown rice.

PEASANT’S PIE
2 tsps Bragg Organic Olive Oil
1 red onion, chop
½ cup whole-grain bread crumbs
2 carrots, grate
⅓ cup cashew nuts, chop
Egg Replacer equal to 1 egg
½ cup vegetable stock or distilled water
shake of Bragg Sprinkle
½ tsp poultry seasoning
1 Tbsp soy or potato flour
TOPPING:
1 lb mashed potatoes
Egg Replacer equal to 1 egg
Chop onions and sauté in olive oil until golden brown. Finely grate carrots. Crush bread crumbs, beat Egg Replacer and mix together with seasonings, nuts and flour. If mixture is too dry, add vegetable stock or water until moist. Place in an oiled baking dish and cover with mixture of mashed potatoes and beaten Egg Replacer. Bake for 30 minutes at 350°F.

MILLET CASSEROLE
2 cups distilled water
⅓ tsp Bragg Sprinkle
1 cup hulled millet
½ cup red onion, chop
½ cup celery, chop
1 cup mushrooms, chop
½ Tbsp Bragg Liquid Aminos
½ cup sunflower seeds, chop
2 cloves garlic, press
1 cup zucchini, chop
Combine all ingredients and mix well. Pour into a casserole dish and bake at 300°F for 1–12 hours until done.

OLIVE TAPENADE
½ cup black pitted olives
½ cup green pitted olives
1 clove garlic, mince
2 Tbsps capers
1 Tbsp fresh lemon juice
¼ cup Bragg Olive Oil
Bragg Liquid Aminos to taste
shake of Bragg Sprinkle
In a blender or food processor, combine the olives, garlic, capers and lemon juice. Blend until smooth. With motor running, add the olive oil, little by little to make a thick sauce. Add Liquid Aminos and Sprinkle to taste. Store in airtight container in the refrigerator up to one week.
Makes 1 cup.

WHOLE ONIONS WITH SOY CHEESE
6 medium-sized onions
¾ cup soy cheese, grate
¼ tsp Bragg Liquid Aminos
¼ tsp Bragg Sprinkle
Peel outer skins, slice even onion tops. Steam 15 minutes. Place up in oiled casserole. Season with Sprinkle and Liquid Aminos. Cover onions with grated soy cheese (croutons optional). Bake at 375°F for few minutes until warmed through.

RAVIOLI WITH WALNUTS
36 vegetarian ravioli or 1 lb whole-grain pasta
½ cup soy milk
1 cup shelled walnuts
½ cup soy cheese, grate
2 Tbsp Bragg Organic Olive Oil
Bragg Liquid Aminos to taste
Bragg Sprinkle to taste
Chop nuts, add soy cheese, soy or rice milk, and olive oil to make a sauce. Add Sprinkle and Liquid Aminos to taste. Cook ravioli or pasta. Drain and coat with the sauce.
