SPINACH WITH PEPPERS

1½ Tbsps bell pep­per, mince
1½ Tbsps red onion, mince
½ Tbsp pimento, mince
1 Tbsp lemon juice
2 cups cooked spinach, mince
3 Tbsps Bragg Organic Olive Oil
½ tsp Bragg Liq­uid Aminos
½ tsp Bragg Sprinkle

Sauté green pep­per, pimento and onion in olive oil 10 min­utes. Add spinach, lemon juice, Sprin­kle and Liq­uid Aminos.

Serves 3.

GREEN SPINACH — VEGGIE SMOOTHIE

3 cups spinach
½ green bell pep­per
2 large toma­toes
1 clove gar­lic, crush
½ cup fresh cilantro
2 cups dis­tilled water
1 lime, juice
1 tsp raw honey or Ste­via to taste

Blend all ingre­di­ents well. Makes about 1 quart.

SPINACH, APPLE and RED ONION SALAD

SPINACH, APPLE AND RED ONION SALAD

1–2 bunches of spinach, tear
½ tsp Bragg Liq­uid Aminos
1 apple, core, chop
shake of Bragg Sprin­kle
1 red onion, slice thin
3 Tbsps Bragg Organic Olive Oil
raw honey (optional)
3 Tbsps freshly squeezed lemon juice
3 cloves gar­lic, mincec

For dress­ing: com­bine gar­lic, lemon juice, olive oil, Liq­uid Aminos, honey (optional) and Sprin­kle. In salad bowl, toss spinach, onion and apples and add this dressing.

Serves 4.

SPINACH TOFU SALAD

½ red onion, thinly slice
2 cups raw mush­rooms, slice
½ cup firm tofu, crum­ble
Bragg Vinai­grette or Gin­ger & Sesame Dressing

Com­bine and toss salad with dress­ing to taste.

SPINACH and NUT LOAF

2 Tbsps Bragg Organic Olive Oil
Egg Replacer equal to 2 eggs
1 cup whole-grain cracker crumbs
shake Bragg Sprin­kle
1 lb spinach
1 red onion, finely chop
1 tsp Bragg Liq­uid Aminos
¾ cup wal­nuts, chop

Wash and steam spinach for 3 min­utes. Chop and add to nuts. Mix in beaten Egg Replacer, onion and whole-grain cracker crumbs. Add Sprin­kle, Liq­uid Aminos and olive oil. Turn into an oiled pan. Bake at 375°F for 20 minutes.

TOFU and SPINACH WITH PEANUT SAUCE

1 lb firm tofu, drain and cube
1 Tbsp Bragg Liq­uid Aminos
1 clove gar­lic, mince
2 Tbsps Bragg Organic Olive Oil
1 tsp fresh gin­ger, mince
1 lb spinach, chop
Peanut Sauce (recipe below)

Mix tofu with Liq­uid Aminos, gar­lic and gin­ger. Stir-fry in olive oil until brown. Remove from pan and keep warm. Add spinach to pan and heat just until limp. Arrange on a plat­ter and top with tofu.Serve with Peanut Sauce.

Serves 4–6.

PEANUT SAUCE
1 Tbsp Bragg Organic Olive Oil
½ cup onion, dice
1 Tbsp fresh gin­ger, mince
¼ tsp cayenne (optional)
¼ — ½ cup hot dis­tilled water
½ cup nat­ural peanut but­ter
1 tsp Bragg Liq­uid Aminos
juice of 1 lemon
1 Tbsp molasses
honey to taste

Sauté onion in olive oil 5 min­utes. Add remain­ing ingre­di­ents and stir until blended. Add hot water to thin sauce. Makes 2 cups.
