SAFFRON RICE

½ cup Bragg Organic Olive
3½ cups of boil­ing dis­tilled water
2 cups brown rice
pinch of saffron

Brown saf­fron in a dry skil­let. Add to 1 cup boil­ing water. Sauté brown rice in olive oil until golden. Add remain­ing dis­tilled water, bring to boil, cover and sim­mer 30 min­utes until cooked. Do not stir while cooking.

RICE STUFFED CABBAGE

1 medium head cab­bage
1 Tbsp Bragg Liq­uid Aminos
2 Tbsps Bragg Olive Oil
5 green onions, thinly slice
½ cup cooked brown rice
½ cup pars­ley, mince
1 cup dis­tilled water
½ tsp cin­na­mon
½ cup wal­nuts, chop
½ tsp clove pow­der
6 car­rots, long slice
2 toma­toes, dice

Place cab­bage in deep pot of rapidly boil­ing water, cover and blanch for 5 min­utes. Remove cab­bage, drain well and care­fully spread leaves to resem­ble open­ing flower petals. Cut a large piece from the cen­ter. Heat olive oil in a skillet.

Add green onions and cook until ten­der. Add rice and cook until it appears translu­cent. Add pars­ley, toma­toes, water, Liq­uid Aminos, cin­na­mon and clove pow­der. Cover tightly and cook 25 min­utes. Most of the liq­uid should be absorbed, but the rice will not be ten­der at this point. Chop cen­ter por­tion of cab­bage and add to rice along with chopped wal­nuts. Care­fully spoon stuff­ing into cen­ter of cab­bage and between the leaves. Shape into a head again and tie securely with clean string. Place in a deep pot. Slice car­rots into 2–3 long pieces each and place around cabbage.

Add 1 cup boil­ing water. Cover and sim­mer on stove­top or bake in oven at 325°F until ten­der.
Cut into wedges and serve in bowls.

Serves 4.

CURRY RICE

CURRY RICE
3 cups brown rice (soak all day or overnight)
½ tsp curry pow­der
shake of Bragg Sprin­kle
1 tsp Bragg Liq­uid Aminos
1 Tbsp Bragg Organic Olive Oil
5 cloves gar­lic, press
3¾ cups dis­tilled water

Bring above ingre­di­ents to a boil, then turn down heat, sim­mer for 20–25 min­utes. Serve with slice lemon, nutri­tional yeast and spray of Liq­uid Aminos.

Serves 6–8.

One of nature’s great­est gifts to mankind is the tiny, golden berry of grain. Whole wheat, rye, bar­ley, oats – all nour­ish­ing nut­like grains – impart rich fla­vor to the menu and tremen­dous energy and healthy food value to the diet.

In mod­ern civ­i­liza­tion, one of the great­est crimes against food has been com­mit­ted against the whole-grain! Since it con­tains ele­ments that do not keep well in stor­age (for instance, the bran and the germ of the grains), the grain com­pa­nies have estab­lished com­mer­cial prac­tices of milling the bran and the germ right out of the grain and offer­ing only a frac­tion of the orig­i­nal sub­stance as an excuse for a rich, golden grain. They have robbed and refined the grains of much of their life, vital­ity, vit­a­mins, and min­er­als, by remov­ing part of their most pre­cious sub­stances! The tiny golden flake (the wheat germ), the rich, nut­like fla­vor of the bran, and the full-bodied fla­vor of the com­pletely blended grain fla­vor, are lost for­ever in the refin­ing processing.
