RAW VEGETABLE PATÉ

RAW VEGETABLE PATÉ

1 cup ground almonds
1 cup ground pump­kin seeds
½ cup bell pep­per, chop
½ cup raw cashew but­ter
4 scal­lions, chop
juice of 1 lemon
¼ cup dis­tilled water
1 cup ground wal­nuts
1 cup raw sesame seeds
1 cup fresh cut corn
6 toma­toes, chop
2 Tbsps Bragg Liq­uid Aminos
2 Tbsp Bragg Olive Oil
shake of Bragg Sprinkle

Mix all ingre­di­ents together and press firmly into a jello mold. Chill until firm, serve on bed of lettuce.

Makes 6–8 servings.

Dandelion Salad

Dan­de­lion Salad

½ head of leaf let­tuce, tear
¼ cup dan­de­lion stems, chop
½ head romaine let­tuce, tear
a few fresh mint leaves
½ cup dan­de­lion leaves, tear
½ cup apple, grated (optional)
Bragg Healthy Organic Vinai­grette or Gin­ger & Sesame Dressing

Toss all torn leaves, dan­de­lion stems, mint and grated apple
together with Bragg Vinai­grette or Gin­ger Dress­ing. Serves 4.

Gourmet Mixed Green Salads

The mixed green sal­ads offered in restau­rants are often less nutri­tious and less fla­vor­ful than desired. Here is a healthy mixed green salad that will delight any salad gourmet. All leaves should be thor­oughly washed, dried and crisped in a cool place, then torn into small pieces. It’s best not to cut the leaves with a knife or kitchen shears.

1 cup green leaf let­tuce, tear
½ cup esca­role
1 cup mixed baby let­tuce leaves
1 cup purslane
¼ cup dan­de­lion greens
1 cup sor­rel leaves
½ cup young, spinach leaves
¼ cup chives, chop
½ cup fresh mint leaves
1 cup romaine let­tuce
1 cup water­cress olives, sliced (optional)

Toss all greens with Bragg Organic Vinai­grette Dress­ing; add some sliced black olives, if desired, before toss­ing with dress­ing. It is dif­fi­cult to assem­ble all these greens at one time, but the trick of this salad is to use as many leafy greens as you can pos­si­bly obtain. Add cherry toma­toes, arti­choke hearts, and any other healthy addi­tions desired. Serves 6.

PROTEIN, PINEAPPLE, ALMOND MILK

1 cup raw almonds
2 bananas
1 Tbsp soy pro­tein pow­der
2–4 cups fresh pineap­ple juice
Vari­a­tion: Cashew or almond milk

Blend almonds and soy pro­tein pow­der with small amount of pineap­ple juice and then add more pineap­ple juice to desired thick­ness. Fol­low same pro­ce­dure for cashew or almond milk if desired. Serves 4.

Lentil Salad

2 cups cooked lentils
1 Tbsp Bragg Organic Olive Oil
2 cups cooked brown rice
1 Tbsp Bragg Apple Cider Vine­gar
1 cup red onion, thinly slice
½ tsp Bragg Sprin­kle
1 tomato, dice
½ tsp paprika
2 cucum­bers, dice
2 cloves gar­lic, crush
1 cup pars­ley, finely chop
Juice of 1 lemon, about 3 Tbsps

Com­bine the lentils, rice, onion, cucum­ber and pars­ley in a salad bowl. Mix the lemon juice, olive oil, vine­gar, paprika, gar­lic and a shake of Bragg Sprin­kle (24 herbs & spices) in a small bowl. Pour over the salad and toss gen­tly to mix.

Serves 3–5.

RAW TABOULEH

RAW TABOULEH

1 cup wheat berries, soak in water 2 hours, then wash
½ cup red onion, finely chop
1 Tbsp Bragg Liq­uid Aminos
1 Tbsp lemon juice
½ cup pars­ley, finely chop
2 cel­ery stalks, finely chop
1½ cups toma­toes, finely chop
1 medium cucum­ber, mince
Bragg Sprin­kle (to taste)

Soften wheat berries, soak 2 hours in water. Drain well and press out excess mois­ture. Mix wheat berries, onions and sea­son­ings (Liq­uid Aminos and Sprin­kle) and crush all together with fork. Add lemon juice, pars­ley, toma­toes and cucum­bers. Mix thor­oughly. Serve on let­tuce leaves or as salad topping.

PATÉ of SEEDS

1 cup raw pump­kin seeds 1 cup raw sun­flower seeds
1 medium red onion, chop 1 tsp Bragg Liq­uid Aminos
½ cup basil, chop shake of Bragg Sprin­kle
Soak pump­kin and sun­flower seeds for 6–12 hours. This gives
them the desired taste and tex­ture. It also starts the sprout­ing
process, which improves the nutri­tional value of the seeds
and aids diges­tion. Drain, rinse thor­oughly, and drain again.
Put the soaked seeds and all the remain­ing ingre­di­ents in a
food proces­sor fit­ted with a metal blade. Process until smooth.
Mound the paté in the cen­ter of a serv­ing dish, cover, and
refrig­er­ate for at least 1 hour before serv­ing. This paté will
keep up to 2 days in the refrig­er­a­tor. Makes 2 cups.

GREEN KALE — VEGGIE SMOOTHIE

6 green kale leaves
¼ ripe avo­cado
1 lemon, juice
2 medium size toma­toes
1 tsp Bragg Liq­uid Aminos
2 green Romaine let­tuce leaves
1 lime, juice
3 gar­lic cloves, crush
shake of Bragg Sprin­kle
1½ cups dis­tilled water

Blend all ingre­di­ents well. Makes about 1 quart.

AVOCADO DIP

2 avo­ca­dos, mash
1 tsp Bragg Liq­uid Aminos
2 cloves gar­lic, mash
cel­ery stalks
1 Tbsp Bragg Olive Oil
tomato, car­rots and zucchini

Com­bine avo­cado, Liq­uid Aminos, Sprin­kle, olive oil and gar­lic. Put mix­ture on cel­ery stalks. Serve with car­rots,
zuc­chini and tomato wedges on bed of let­tuce if desired.
