RAW VEGETABLE PATÉ
1 cup ground almonds
1 cup ground pumpkin seeds
½ cup bell pepper, chop
½ cup raw cashew butter
4 scallions, chop
juice of 1 lemon
¼ cup distilled water
1 cup ground walnuts
1 cup raw sesame seeds
1 cup fresh cut corn
6 tomatoes, chop
2 Tbsps Bragg Liquid Aminos
2 Tbsp Bragg Olive Oil
shake of Bragg Sprinkle
Mix all ingredients together and press firmly into a jello mold. Chill until firm, serve on bed of lettuce.
Makes 6–8 servings.

Dandelion Salad
½ head of leaf lettuce, tear
¼ cup dandelion stems, chop
½ head romaine lettuce, tear
a few fresh mint leaves
½ cup dandelion leaves, tear
½ cup apple, grated (optional)
Bragg Healthy Organic Vinaigrette or Ginger & Sesame Dressing
Toss all torn leaves, dandelion stems, mint and grated apple
together with Bragg Vinaigrette or Ginger Dressing. Serves 4.

Gourmet Mixed Green Salads
The mixed green salads offered in restaurants are often less nutritious and less flavorful than desired. Here is a healthy mixed green salad that will delight any salad gourmet. All leaves should be thoroughly washed, dried and crisped in a cool place, then torn into small pieces. It’s best not to cut the leaves with a knife or kitchen shears.
1 cup green leaf lettuce, tear
½ cup escarole
1 cup mixed baby lettuce leaves
1 cup purslane
¼ cup dandelion greens
1 cup sorrel leaves
½ cup young, spinach leaves
¼ cup chives, chop
½ cup fresh mint leaves
1 cup romaine lettuce
1 cup watercress olives, sliced (optional)
Toss all greens with Bragg Organic Vinaigrette Dressing; add some sliced black olives, if desired, before tossing with dressing. It is difficult to assemble all these greens at one time, but the trick of this salad is to use as many leafy greens as you can possibly obtain. Add cherry tomatoes, artichoke hearts, and any other healthy additions desired. Serves 6.

1 cup raw almonds
2 bananas
1 Tbsp soy protein powder
2–4 cups fresh pineapple juice
Variation: Cashew or almond milk
Blend almonds and soy protein powder with small amount of pineapple juice and then add more pineapple juice to desired thickness. Follow same procedure for cashew or almond milk if desired. Serves 4.

2 cups cooked lentils
1 Tbsp Bragg Organic Olive Oil
2 cups cooked brown rice
1 Tbsp Bragg Apple Cider Vinegar
1 cup red onion, thinly slice
½ tsp Bragg Sprinkle
1 tomato, dice
½ tsp paprika
2 cucumbers, dice
2 cloves garlic, crush
1 cup parsley, finely chop
Juice of 1 lemon, about 3 Tbsps
Combine the lentils, rice, onion, cucumber and parsley in a salad bowl. Mix the lemon juice, olive oil, vinegar, paprika, garlic and a shake of Bragg Sprinkle (24 herbs & spices) in a small bowl. Pour over the salad and toss gently to mix.
Serves 3–5.

RAW TABOULEH
1 cup wheat berries, soak in water 2 hours, then wash
½ cup red onion, finely chop
1 Tbsp Bragg Liquid Aminos
1 Tbsp lemon juice
½ cup parsley, finely chop
2 celery stalks, finely chop
1½ cups tomatoes, finely chop
1 medium cucumber, mince
Bragg Sprinkle (to taste)
Soften wheat berries, soak 2 hours in water. Drain well and press out excess moisture. Mix wheat berries, onions and seasonings (Liquid Aminos and Sprinkle) and crush all together with fork. Add lemon juice, parsley, tomatoes and cucumbers. Mix thoroughly. Serve on lettuce leaves or as salad topping.

1 cup raw pumpkin seeds 1 cup raw sunflower seeds
1 medium red onion, chop 1 tsp Bragg Liquid Aminos
½ cup basil, chop shake of Bragg Sprinkle
Soak pumpkin and sunflower seeds for 6–12 hours. This gives
them the desired taste and texture. It also starts the sprouting
process, which improves the nutritional value of the seeds
and aids digestion. Drain, rinse thoroughly, and drain again.
Put the soaked seeds and all the remaining ingredients in a
food processor fitted with a metal blade. Process until smooth.
Mound the paté in the center of a serving dish, cover, and
refrigerate for at least 1 hour before serving. This paté will
keep up to 2 days in the refrigerator. Makes 2 cups.

6 green kale leaves
¼ ripe avocado
1 lemon, juice
2 medium size tomatoes
1 tsp Bragg Liquid Aminos
2 green Romaine lettuce leaves
1 lime, juice
3 garlic cloves, crush
shake of Bragg Sprinkle
1½ cups distilled water
Blend all ingredients well. Makes about 1 quart.

1 tsp Bragg Liquid Aminos
2 cloves garlic, mash
celery stalks
1 Tbsp Bragg Olive Oil
tomato, carrots and zucchini
Combine avocado, Liquid Aminos, Sprinkle, olive oil and garlic. Put mixture on celery stalks. Serve with carrots,
zucchini and tomato wedges on bed of lettuce if desired.
