HUMMUS

HUMMUS*
2 cups cooked gar­banzo beans
juice of 1 lemon
1 tsp Bragg Liq­uid Aminos
1 cup tahini
shakes of Bragg Sprin­kle
2 cloves gar­lic, chop

In blender, place cooked gar­ban­zos with enough liq­uid to keep wet, about the con­sis­tency of peanut but­ter. Add tahini, gar­lic, lemon juice, Sprin­kle and Liq­uid Aminos. Blend well and chill for 1 hour before serv­ing. This makes nutri­tious pita sand­wich spreads and tasty dips. This com­bi­na­tion is impor­tant in a veg­e­tar­ian diet since it sup­plies a sub­stan­tial amount of veg­etable pro­tein. Makes 2 cups.

BEAN SPREAD, NUT BUTTER and VEGETABLE SPREAD

BEAN SPREAD

Com­bine cooked beans of your choice with chopped onion, minced pars­ley, tofu­naise (page 139). Blend into a spread for dips, sand­wiches or stuff­ings. When mak­ing sand­wiches, pre­pare open face with a let­tuce leaf or cab­bage leaf on top.

NUT BUTTER AND VEGETABLE SPREAD

Com­bine grated or ground raw car­rots, cel­ery, and onions with nut but­ter of choice. Sea­son to taste.

LENTIL LOAF

LENTIL LOAF

1½ cups cooked lentils
1½ cups soy milk
1½ cups whole-grain bread crumbs
¾ tsp Bragg Liq­uid Aminos
1½ Tbsps pars­ley, chop
shake of Bragg Sprinkle

Mix all ingre­di­ents well, place in oiled pan. Bake at 350°F for 20 min­utes until firm. Beans or peas may be sub­sti­tuted for lentils. Also cooked whole-grain cereal (many vari­eties to choose from) can be used instead of lentils.
