PECAN PIE

Egg Replacer equal to 3 eggs
1 cup maple syrup
¼ cup Bragg Olive Oil
1 cup pecans
½ cup raw honey
1 tsp vanilla extract
1 whole-grain pie crust (see recipe below)

Add honey, maple syrup, vanilla and olive oil to Egg Replacer. Layer pecans in a pie pan lined with whole-grain pas­try shell. Add honey mix­ture. Bake at 350°F for 50–60 min­utes. The nuts will rise to form a topping.

Serves 6.

WHOLE-GRAIN PIE CRUST
2¼ cups whole-grain pas­try flour
about 5 Tbsps dis­tilled ice water
½ cup Bragg Organic Olive Oil

Mix oil into whole-grain pas­try flour. Add water and mix slowly to form a soft dough. Roll on floured board to desired shape and thick­ness. Makes 2 crusts.

Pre­vent breads, pas­tries and cakes from stick­ing to pans by a spray of Bragg Organic Olive Oil from a mist­ing container.

BANANA CREAM PIE

BANANA CREAM PIE

2 bananas, peel
½ cup fresh raw apple juice
1 Tbsp raw honey
1 raw pie crust (recipe below)
4 bananas, peel, slice
½ cup shred­ded coconut
2 dates, pitted

Blend the two peeled bananas and other ingre­di­ents (except coconut) in blender, then put into a raw pie crust.  Now gen­tly place the thinly sliced bananas and shred­ded coconut over pie top. Chill to set before serving.

Serves 4–6.

PUMPKIN PIE FILLING

2 cups pump­kin, strain
½ cup raw honey
½ tsp gin­ger pow­der
½ tsp all­spice pow­der
½ cup soy milk
Egg Replacer equal to 2 eggs
1½ tsps cin­na­mon powder

Add soy milk, sweet­ener, Egg Replacer and spices to pump­kin. Stir for 2 min­utes. Pour into pie tin lined with whole-grain or whole-grain/soy pie crust (see recipe page 203). Bake at 425°F about 45 min­utes or until fill­ing is firm.
