3 oz well-drained soft tofu
1 tsp raw honey (optional) or Stevia powder to taste
juice from 1 orange
juice from 1 lemon
Blend tofu, lemon and orange juice and honey or Stevia powder until creamy.
Makes 1 cup.

FRESH FRUIT BOUQUET
1 medium pineapple, dice
1 cup grapes, whole
3 oranges
2 fresh pears
2 grapefruits
soy yogurt (optional)
Chill all fruits. Dice fresh pineapple. Peel and section the oranges and grapefruits. Remove grapes from stems. Cut un-peeled fresh pears into cubes. Combine all fruits and serve in chilled sherbet dishes. Garnish with soy yogurt, if desired.

¾ cup freshly squeezed orange juice
1¼ tsps grated orange rind
2 Tbsps Bragg Organic Olive Oil
2 Tbsps potato flour or arrowroot flour
3¼ cups cooked beets, slice
¾ cup distilled water
2 tsps raw honey
Stir potato or arrowroot flour into olive oil; add water slowly. Add orange rind, orange juice and honey. Cook until smooth and thick. While stirring, add cooked sliced beets and cook 3–5 minutes.
