EGGPLANT and OKRA

1 egg­plant, un-peeled, chop
½ tsp Bragg Liq­uid Aminos soy
1 tsp Bragg Olive Oil
2 large toma­toes, dice
1 Tbsp bell pep­per, chop
2 cups okra, slice
Parme­san cheese
2 cloves gar­lic, slice
⅓ cup chives or green onion tops
shake of Bragg Sprinkle

Sauté all of the ingre­di­ents except soy cheese, together in wok or pan for about 10–12 min­utes, or until ten­der. Sprin­kle with soy Parme­san cheese before serving.

Serves 4–6.

TOMATO OKRA

1 lb okra, slice
1 red onion, chop
2 cups toma­toes, chop
½ tsp Bragg Liq­uid Aminos
½ tsp Bragg Sprin­kle
1 Tbsp Bragg Organic Olive Oil

Cook okra in olive oil until ten­der; add toma­toes, onions, Liq­uid Aminos and Sprin­kle (24 herbs & spices). Sim­mer until done. This recipe is also deli­cious with 1 tea­spoon sweet basil added at end of cook­ing. Serve in small bowls.

Serves 2–4.
