ARTICHOKES WITH GARLIC & HERBS

4 arti­chokes
3 Tbsps fresh squeezed lemon juice
¼ cup Bragg Organic Olive Oil
4 cloves gar­lic, slice
1 tsp Bragg Liq­uid Aminos
⅓ tsp Bragg Sprinkle

Wash arti­chokes thor­oughly. Cut one inch off the tops. Remove stems. Place sliced gar­lic between the leaves of the arti­chokes. Mix Sprin­kle, olive oil, Liq­uid Aminos and lemon juice and sprin­kle over arti­chokes. Stand arti­chokes on end in a saucepan using steamer bas­ket. Steam for 30 min­utes or until tender.

Serve hot or cold, whole or halved, with tofu­naise (see recipe below).

Serves 4–8.

TOFUNAISE
¼ cup dis­tilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprin­kle
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon
1 tsp turmeric (optional for color)

Blend all ingre­di­ents in blender until smooth. Yields 2 cups.

EGGPLANT — GARLIC BAKE

1 egg­plant
4 cloves gar­lic, slice
Bragg Organic Olive Oil
shake of Bragg Sprin­kle
Bragg Liq­uid Aminos
1 cup dis­tilled water

Cut egg­plant in half, stud with sliced gar­lic. Spray with Liq­uid Aminos and add Sprin­kle. Place in casse­role with water. Cover tightly, bake at 350°F for 40 min­utes or until soft. Vari­a­tion: last min­utes add diced toma­toes and grated soy cheese.

Serves 4.

GARLIC TOFU SOUP

GARLIC TOFU SOUP

20 cloves gar­lic, peel
4 to 6 cups boil­ing dis­tilled water
1 tsp Bragg Olive Oil
¼ cup pars­ley, chop
½ cup pea pods|
16 oz pack­age tofu, cube
Spray of Bragg Liq­uid Aminos and shake Bragg Sprin­kle, to taste
Sauté whole gar­lic cloves in a skil­let with olive oil. Add tofu
cubes, water, pars­ley, and pea pods. Sim­mer for 10 min­utes.
Spray with Liq­uid Aminos and add Sprin­kle to taste.

Serves 4–6
