HUMMUS

2 cups cooked gar­banzo beans
juice of 1 lemon
1 tsp Bragg Liq­uid Aminos
1 cup tahini
shakes of Bragg Sprin­kle
2 cloves gar­lic, chop

In blender, place cooked gar­ban­zos with enough liq­uid to keep wet, about the con­sis­tency of peanut but­ter. Add tahini, gar­lic, lemon juice, Sprin­kle and Liq­uid Aminos. Blend well and chill for 1 hour before serv­ing. This makes nutri­tious pita sand­wich spreads and tasty dips. This com­bi­na­tion is impor­tant in a veg­e­tar­ian diet since it sup­plies a sub­stan­tial amount of veg­etable protein.

Makes 2 cups.

PASTA WITH GARBANZO SAUCE

PASTA WITH GARBANZO SAUCE

1 lb pasta, any shape
2 cups cooked gar­banzo beans, mash
1 Tbsp Bragg Olive Oil 2 stalks cel­ery, dice
1 red onion, dice
1 tsp Bragg Liq­uid Aminos
2 cloves gar­lic, mince
pinch cayenne, to taste
½ tsp Bragg Sprin­kle
1 cup tomato sauce (see recipe below)

While pasta cooks, sauté onion, gar­lic and cel­ery in olive oil until golden. Add cooked, mashed gar­banzo beans, tomato sauce, Sprin­kle, Liq­uid Aminos and spices and sim­mer 10 min­utes. Toss with cooked pasta, gar­nish with nutri­tional yeast flakes, pars­ley or basil.

TOMATO SAUCE

2 cups cooked toma­toes, with juice
1 Tbsp raw honey
½ cup onions, finely chop, sauté
½ tsp Bragg Liq­uid Aminos
½ cup green pep­per, chop
shake of Bragg Kelp
1 cup toma­toes, finely chop
1 tsp Bragg Sprin­kle
1 Tbsp Bragg Organic Olive Oil
3 gar­lic cloves, crush

Place juice from 2 cups cooked toma­toes in sauce pan with sautéed onions and chopped pep­per. Bring to a boil and let sim­mer, stir­ring occa­sion­ally, until vol­ume is reduced by half. Add all remain­ing ingre­di­ents. Let sim­mer briefly or until mix­ture is thick.

Serves 4–6.

FALAFELS

FALAFELS

1 cup gar­banzo beans
½ cup onion
¼ cup pars­ley
2 cloves gar­lic, mince
1 tsp Bragg Liq­uid Aminos
1 tsp ground cumin
½ tsp ground corian­der
¼ tsp Bragg Sprin­kle
2 Tbsps whole-grain flour
1 Tbsp Bragg Olive Oil

Soak gar­banzo beans overnight. Drain thor­oughly. Com­bine in food proces­sor with remain­ing ingre­di­ents, except olive
oil. Shape mix­ture into small round pat­ties and place on oiled cookie sheet. Bake at 350°F for 30 min­utes. Serve 2 pat­ties in a pita with shred­ded cab­bage, car­rots, cel­ery, and chopped toma­toes. Top with hum­mus (recipe below).

Serves 4.

CARROT HUMMUS

2 cups cooked car­rots
2 cloves gar­lic
⅓ cup tahini pita bread tri­an­gles
15 oz can chick­peas, drain and reserve liq­uid
⅓ cup fresh lemon juice
Bragg Liq­uid Aminos to taste

In a food proces­sor or blender, purée car­rots, chick­peas, tahini, gar­lic and lemon juice until smooth. Add reserved liq­uid from chick­peas as needed to make a thick purée. Makes 2 cups.
