HUMMUS
2 cups cooked garbanzo beans
juice of 1 lemon
1 tsp Bragg Liquid Aminos
1 cup tahini
shakes of Bragg Sprinkle
2 cloves garlic, chop
In blender, place cooked garbanzos with enough liquid to keep wet, about the consistency of peanut butter. Add tahini, garlic, lemon juice, Sprinkle and Liquid Aminos. Blend well and chill for 1 hour before serving. This makes nutritious pita sandwich spreads and tasty dips. This combination is important in a vegetarian diet since it supplies a substantial amount of vegetable protein.
Makes 2 cups.

PASTA WITH GARBANZO SAUCE
1 lb pasta, any shape
2 cups cooked garbanzo beans, mash
1 Tbsp Bragg Olive Oil 2 stalks celery, dice
1 red onion, dice
1 tsp Bragg Liquid Aminos
2 cloves garlic, mince
pinch cayenne, to taste
½ tsp Bragg Sprinkle
1 cup tomato sauce (see recipe below)
While pasta cooks, sauté onion, garlic and celery in olive oil until golden. Add cooked, mashed garbanzo beans, tomato sauce, Sprinkle, Liquid Aminos and spices and simmer 10 minutes. Toss with cooked pasta, garnish with nutritional yeast flakes, parsley or basil.
TOMATO SAUCE
2 cups cooked tomatoes, with juice
1 Tbsp raw honey
½ cup onions, finely chop, sauté
½ tsp Bragg Liquid Aminos
½ cup green pepper, chop
shake of Bragg Kelp
1 cup tomatoes, finely chop
1 tsp Bragg Sprinkle
1 Tbsp Bragg Organic Olive Oil
3 garlic cloves, crush
Place juice from 2 cups cooked tomatoes in sauce pan with sautéed onions and chopped pepper. Bring to a boil and let simmer, stirring occasionally, until volume is reduced by half. Add all remaining ingredients. Let simmer briefly or until mixture is thick.

FALAFELS
1 cup garbanzo beans
½ cup onion
¼ cup parsley
2 cloves garlic, mince
1 tsp Bragg Liquid Aminos
1 tsp ground cumin
½ tsp ground coriander
¼ tsp Bragg Sprinkle
2 Tbsps whole-grain flour
1 Tbsp Bragg Olive Oil
Soak garbanzo beans overnight. Drain thoroughly. Combine in food processor with remaining ingredients, except olive
oil. Shape mixture into small round patties and place on oiled cookie sheet. Bake at 350°F for 30 minutes. Serve 2 patties in a pita with shredded cabbage, carrots, celery, and chopped tomatoes. Top with hummus (recipe below).
Serves 4.

Garbanzo beans (also known as chickpeas) have a delicious nutlike taste and buttery texture. They provide a good source of protein that can be enjoyed year-round and are available either dried or canned.
A very versatile legume, they are a noted ingredient in many Middle Eastern and Indian dishes such as hummus, falafels and curries. While many people think of garbanzos as being beige in color, there are varieties that feature black, green, red and brown beans.

2 cups cooked carrots
2 cloves garlic
⅓ cup tahini pita bread triangles
15 oz can chickpeas, drain and reserve liquid
⅓ cup fresh lemon juice
Bragg Liquid Aminos to taste
In a food processor or blender, purée carrots, chickpeas, tahini, garlic and lemon juice until smooth. Add reserved liquid from chickpeas as needed to make a thick purée. Makes 2 cups.
