INDIAN EGGPLANT

2 cups egg­plant, dice
1½ cups dis­tilled water
¼ tsp Bragg Sprin­kle
1 sprig lemon balm, mince
¼ tsp cayenne pep­per (optional)
½ tsp Bragg Liq­uid Aminos
¼ cup Bragg Organic Olive Oil
⅛ tsp sage
1 tsp pars­ley, mince
1 tsp mint, mince
4 Tbsps lemon juice
shake of Bragg Kelp

Place egg­plant in water with sage, Sprin­kle, pars­ley, mint and lemon balm and 2 table­spoons of lemon juice. Cook until egg­plant is ten­der; mix olive oil with the other 2 table­spoons of lemon juice, Kelp, Liq­uid Aminos and cayenne pep­per. Serve over eggplant.

EGGPLANT — GARLIC BAKE

1 egg­plant
4 cloves gar­lic, slice
Bragg Organic Olive Oil
shake of Bragg Sprin­kle
Bragg Liq­uid Aminos
1 cup dis­tilled water

Cut egg­plant in half, stud with sliced gar­lic. Spray with Liq­uid Aminos and add Sprin­kle. Place in casse­role with water. Cover tightly, bake at 350°F for 40 min­utes or until soft. Vari­a­tion: last min­utes add diced toma­toes and grated soy cheese.

EGGPLANT and OKRA

1 egg­plant, un-peeled, chop
½ tsp Bragg Liq­uid Aminos soy
1 tsp Bragg Olive Oil
2 large toma­toes, dice
1 Tbsp bell pep­per, chop
2 cups okra, slice
Parme­san cheese
2 cloves gar­lic, slice
⅓ cup chives or green onion tops
shake of Bragg Sprinkle

Sauté all of the ingre­di­ents except soy cheese, together in wok or pan for about 10–12 min­utes, or until ten­der. Sprin­kle with soy Parme­san cheese before serving.

Serves 4–6.

STUFFED BAKED EGGPLANT

1 large, firm egg­plant
2 tsps grated soy cheese
½ tsp Bragg Liq­uid Aminos
1 Tbsp Bragg Organic Olive Oil
1 cup whole-grain bread crumbs
2 toma­toes, chop
1 green pep­per, mince
1 cup cel­ery, finely cut
2 Tbsps red onion, mince
shake of Bragg Sprinkle

Cut egg­plant in half, remove pulp, leav­ing thick layer in hulls. Cut pulp into bits, mix with all ingre­di­ents. Fill egg­plant hulls, place in bak­ing casse­role with one cup dis­tilled water in bot­tom. Cover and bake 30 min­utes or until done at 325°F.
