APPLE LEMONADE

6 cups fresh apple juice
1⅛ cups fresh lemon juice
⅓ cup raw honey
fresh mint sprigs

Com­bine apple and lemon juice. Add honey and stir until the honey dis­solves. Fill 5–6 glasses about  2/3  full with the apple lemon­ade. Add enough ice to fill the glasses. Place a sprig of fresh mint leaves in each glass.

Serves 7.

MINT — LIME TINGLE

18 fresh mint sprigs, chop
¾ cup dis­tilled water
3 cups unsweet­ened fresh grape juice
¾ cup fresh lime juice
⅓ cup raw honey

Com­bine water and honey. Sim­mer 8 min­utes. Pour over the chopped mint leaves. Cool; stir into com­bined fruit juices. Pour over shaved ice in glasses. Serve right away.

Serves 4.

One of my co-workers always asks for a slice of lemon in his water. I shud­der every time I see that piece of lemon float­ing in his glass, but I don’t have the nerve to tell him it’s prob­a­bly loaded with germs. Am I mistaken?

BARLEY WATER

Wash 4 cup nat­ural bar­ley and soak overnight. Drain. Add one quart dis­tilled water and sim­mer until the bar­ley is thor­oughly done and about 12 cups of liq­uid remains. Strain and serve plain, or add soy milk and sea­son to taste with honey (or Ste­via pow­der), pure vanilla, etc.

PINEAPPLE MINT JULEP

8 fresh mint sprigs
½ cup fresh lemon juice
3 cups unsweet­ened pineap­ple juice
½ cup raw honey (or Ste­via herb pow­der to taste)

Wash mint leaves, set aside 4 leaves for gar­nish. Bruise oth­ers with spoon to release fla­vor; cover with honey. Add lemon juice and let stand about 15 min­utes. Add pineap­ple juice and blend. Pour over ice in pitcher or tall glasses. Gar­nish with remain­ing sprigs of mint.

Makes 4 glasses.

PROTEIN, PINEAPPLE, ALMOND MILK

1 cup raw almonds
2–4 cups fresh pineap­ple juice — Vari­a­tion: Cashew or almond milk
2 bananas
1 Tbsp soy pro­tein powder

Blend almonds and soy pro­tein pow­der with small amount of pineap­ple juice and then add more pineap­ple juice to desired thick­ness. Fol­low same pro­ce­dure for cashew or almond milk if desired (almond recipe is below)

Serves 4.

Almond Milk
1 cup raw almonds (soak overnight)
1 qt dis­tilled or puri­fied water
3 dates, pit, chop (optional)
raw honey or ste­via pow­der to taste

Put rinsed raw almonds, honey, dates and 12 — 2 cups of dis­tilled or puri­fied water in blender and blend until smooth.
Pour into con­tainer and add remain­ing water. Always shake well before pour­ing, as con­tents will set­tle.  Makes 4 cups.
