A new study shows that drinking a daily dose of wild blueberry juice improved the memory of older adults with age-related memory problems.

It is already known that blueberries are rich in antioxidants and vitamins. New research from the Lund University Faculty of Engineering in Sweden shows that blueberry fibre are important and can alleviate and protect against intestinal inflammations, such as ulcerative colitis. The protective effect is even better if the blueberries are eaten together with probiotics.

1½ cups whole-grain pastry flour
¼ cup Bragg Organic Olive Oil
4 tsps whole-grain pastry flour
Egg Replacer equal to 1 egg
2 tsps baking powder
¾ cup raw honey
½ cup soy milk
1 tsp vanilla extract
1¼ cups blueberries, fresh or frozen
Sift 12 cups of whole-grain flour and baking powder together three times. Gradually add honey to olive oil and beat until light. Add Egg Replacer and mix well. Add flour mixture alternately with soy milk and vanilla, beating after each addition until smooth. Lightly toss blueberries with four teaspoons of whole-grain flour and fold into batter. Bake in an oiled and floured 8-inch square pan at 350°F for 60 minutes or until done. Cut in squares.
Makes 16 squares.
