BLUEBERRIES COUNTERACT INTESTINAL DISEASES

It is already known that blue­ber­ries are rich in antiox­i­dants and vit­a­mins. New research from the Lund Uni­ver­sity Fac­ulty of Engi­neer­ing in Swe­den shows that blue­berry fibre are impor­tant and can alle­vi­ate and pro­tect against intesti­nal inflam­ma­tions, such as ulcer­a­tive col­i­tis. The pro­tec­tive effect is even bet­ter if the blue­ber­ries are eaten together with probiotics.

BLUEBERRY SQUARES

1½ cups whole-grain pas­try flour
¼ cup Bragg Organic Olive Oil
4 tsps whole-grain pas­try flour
Egg Replacer equal to 1 egg
2 tsps bak­ing pow­der
¾ cup raw honey
½ cup soy milk
1 tsp vanilla extract
1¼ cups blue­ber­ries, fresh or frozen

Sift 12 cups of whole-grain flour and bak­ing pow­der together three times. Grad­u­ally add honey to olive oil and beat until light. Add Egg Replacer and mix well. Add flour mix­ture alter­nately with soy milk and vanilla, beat­ing after each addi­tion until smooth. Lightly toss blue­ber­ries with four tea­spoons of whole-grain flour and fold into bat­ter. Bake in an oiled and floured 8-inch square pan at 350°F for 60 min­utes or until done. Cut in squares.

Makes 16 squares.
