BLACK BEAN SALAD

1 cup black beans
2 cloves gar­lic, mince
½ red bell pep­per, chop
1 small chili pep­per, mince
½ cup green onions, chop
1 cup fresh or frozen corn
2 Tbsps fresh lemon juice
2 Tbsps Bragg Organic Olive Oil
shake of Bragg Sprin­kle
shake of Bragg Kelp
1 tsp Bragg Liq­uid Aminos
Bragg Apple Cider Vine­gar (to taste)
Optional: chopped cilantro, apples and avo­cado slices (if desired)

Soak beans overnight.  Drain well, rinse and cover with dis­tilled water. Cook for 45 min­utes or until ten­der. Drain well and save liq­uid for soup. Cool and mix beans with all ingre­di­ents. Make dress­ing with lemon juice, olive oil and Liq­uid Aminos. Mix thor­oughly and add vine­gar to taste. Top with chopped cilantro, apples and avo­cado slices as desired.

QUICK BLACK BEAN CHILI

QUICK BLACK BEAN CHILI

1 Tbsp Bragg Liq­uid Aminos
4 oz can chilies, dice
15 oz can diced toma­toes
2 red onions, chop
½ tsp Bragg Sprin­kle
4 cloves gar­lic, crush
1 Tbsp Bragg Olive Oil
2 –15 oz cans black beans, drain and rinse
⅓ tsp dried cumin
½ cup dis­tilled water
¼ cup cilantro, chop

Heat water in large pan, add onions and gar­lic. Cook over medium heat until onions are soft. Add sea­son­ings, Liq­uid Aminos and chilies. Cook 5 min­utes over medium heat. Add toma­toes, black beans, and olive oil. Cover, sim­mer 10 minutes.

Top with cilantro and nutri­tional yeast flakes.

Serves 4–6.
