CAROB — NUT FROZEN BANANAS

carob pow­der
bananas, firm, ripe
raw peanut or raw cashew or almond  but­ter
chopped raw nuts (of choice)

Peel firm bananas. Place on cookie sheet and freeze. Mix carob pow­der with peanut or cashew but­ter to taste. Remove frozen bananas and cover with nut but­ter mix­ture. Roll cov­ered bananas in chopped nuts of choice and refreeze until ready to serve.

BANANA CREAM PIE

BANANA CREAM PIE

2 bananas, peel
½ cup fresh raw apple juice
1 Tbsp raw honey
1 raw pie crust (recipe below)
4 bananas, peel, slice
½ cup shred­ded coconut
2 dates, pitted

Blend the two peeled bananas and other ingre­di­ents (except coconut) in blender, then put into a raw pie crust.  Now gen­tly place the thinly sliced bananas and shred­ded coconut over pie top. Chill to set before serving.

Serves 4–6.

WHOLE-GRAIN PIE CRUST (2)
2¼ cups whole-grain pas­try flour
about 5 Tbsps dis­tilled ice water
½ cup Bragg Organic Olive Oil

Mix oil into whole-grain pas­try flour. Add water and mix slowly to form a soft dough. Roll on floured board to desired shape and thickness.

Makes 2 crusts.

BANANA RAISIN MUFFINS

BANANA RAISIN MUFFINS

1½ cups whole-grain flour
1 tsp bak­ing soda
½ cup organic raw honey
¼ cup Bragg Olive Oil
¼ cup soy milk
1 cup bananas, mash
1 tsp vanilla extract
⅓ cup organic raisins
¼-½ cup chop nuts (optional)

Stir bak­ing soda and flour into a bowl. Add honey, olive oil, soy milk, mashed bananas and vanilla extract. Mix until flour is just moist­ened. Fold in raisins and nuts if desired. Fill oiled muf­fin tins w full with bat­ter. Bake 375°F for 15 min­utes or until golden brown. Remove from pan immediately.

Makes 12.
