ALMOND MILK

ALMOND MILK

1 cup raw almonds
1 qt dis­tilled or puri­fied water
raw honey or ste­via pow­der to taste
(soak overnight) 3 dates, pit, chop (optional)

Put rinsed raw almonds, honey, dates and 12 — 2 cups of dis­tilled or puri­fied water in blender and blend until smooth. Pour into con­tainer and add remain­ing water. Always shake well before pour­ing, as con­tents will set­tle. Makes 4 cups.

  2. Add a pinch of salt to enhance the fla­vors and make it store just a wee bit longer in the fridge.

  3. I used to make almond milk a long time ago. The recipe I used called for blanch­ing the almonds first but I will try it your way and see what hap­pens. Thanks for remind­ing me and I’ll stop buy­ing it now.
