ALMOND MILK
1 cup raw almonds
1 qt distilled or purified water
raw honey or stevia powder to taste
(soak overnight) 3 dates, pit, chop (optional)
Put rinsed raw almonds, honey, dates and 12 — 2 cups of distilled or purified water in blender and blend until smooth. Pour into container and add remaining water. Always shake well before pouring, as contents will settle. Makes 4 cups.

Add a pinch of salt to enhance the flavors and make it store just a wee bit longer in the fridge.

I used to make almond milk a long time ago. The recipe I used called for blanching the almonds first but I will try it your way and see what happens. Thanks for reminding me and I’ll stop buying it now.
