DATE and NUT CRUMBLE

Egg Replacer equal to 2 eggs
2 Tbsps whole-grain flour
¼ tsp pure vanilla extract
2 cups dates, chop
½ cup raw honey
¼ tsp bak­ing pow­der
1 Tbsp soy milk
1 cup nuts or seeds, chop

Add honey to Egg Replacer. Add sifted dry ingre­di­ents, dates and nuts or seeds, then soy milk and vanilla extract. Spread a thin layer in an oiled 9x9-inch pan. Bake at 250°F for 35 min­utes. Cool and break into small pieces. Pile pieces alter­nately with whipped soy, nut, or rice cream, or soy yogurt in chilled sher­bet glasses.

Serves 4.

New research sug­gests that expo­sure to high lev­els of organophos­phate pes­ti­cides, com­monly found on berries, cel­ery and other pro­duce, could raise the odds for attention-deficit/hyperactivity dis­or­der (ADHD) in children.

At this point, though, there is no evi­dence that pes­ti­cide expo­sure can actu­ally cause ADHD, stated the authors of a paper appear­ing in the June issue of Pedi­atrics.

BEAN SPREAD

Com­bine cooked beans of your choice with chopped onion, minced pars­ley, Tofu­naise (see recipe below).

Blend into a spread for dips, sand­wiches or stuff­ings. When mak­ing sand­wiches, pre­pare open face with a let­tuce leaf or cab­bage leaf on top.

TOFUNAISE
¼ cup dis­tilled water
4 oz firm tofu, cut into pieces
shake of Bragg Sprin­kle
1 Tbsp sesame oil
1 tsp Bragg Aminos, to taste
juice from lemon
1 tsp turmeric (optional for color)

Blend all ingre­di­ents in blender until smooth. Yields 2 cups.

STUFFED PASTA SHELLS

1 lb whole-grain pasta shells
1 lb soft tofu, drain and crum­ble
1 cup spinach, chop
2 cloves gar­lic, mince
½ cup soy cheese, grated for top­ping
½ cup fresh basil, chop
½ cup soy Parme­san cheese
⅓ tsp Bragg Sprin­kle
⅓ tsp Bragg Sea Kelp
Egg Replacer equal to 2 eggs
2 Tbsps Bragg Organic Olive Oil

Cook pasta shells accord­ing to pack­age. Mean­while com­bine remain­ing ingre­di­ents in a large bowl until thor­oughly mixed. Drain pasta shells, stuff each one with a large spoon­ful of mix­ture and place in an oiled 6x9” glass bak­ing dish. Bake at 350°F for 30 min­utes. Top with grated soy cheese and return to oven for 5 more minutes.

Serves 4–6.

Join Bragg in Observing Memorial Day

I’m deeply sad­dened by the loss of lives in our Armed Forces and for all the wars in the world. The Bragg fam­ily lost an Air Force Pilot in World War II and I also lost my first cousin in the Bataan Death March. He was straight out of uni­ver­sity and served as a young 1st Lieu­tenant in the Armed Forces.

May our Armed Forces be blessed and pro­tected wher­ever they may serve.
